Mayonnaise factory uses machines and mixers are to create mayonnaise. A wide variety of these machines are available, but the two most common types are single- stage and multi-stage. A single-stager is used to completely mix the eggs, oil and any other ingredients in one step. On the other hand, a multi-stager has multiple mixing and blending stages which allow for a quicker production time.

Mayonnaise is an oil-in-water emulsion usually containing a minimum of 65% vegetable oil up to more than 74%. Aside from oil and water, its mixture contains vinegar, spices, flavors such as sugar, salt and mustard and stabilizers in the following proportions:
- Nonionic Stabilizers: The most common nonionic stabilizers used in mayonnaise are potassium sorbate and sodium benzoate. These two ingredients have been shown to prevent the growth of Listeria monocytogenes and other spoilage organisms in processed foods.
- Anionic Stabilizers: The most common anionic stabilizers used in mayonnaise are potassium chloride (KCl) and sodium chloride (NaCl). These two salts work together to stabilize the emulsion’s structure by forming micelles that trap water molecules within the mixture until they are needed for hydration purposes. As a result, this action increases the viscosity of the finished product and keeps it from separating into droplets during storage or processing.

Upon starting the production, the following procedures are commonly followed in Mayonnaise factory production:
First, the egg yolk is mixed in the water and one-third of the vinegar is added. The egg yolk must be beaten well to ensure that it is smooth and not broken. Then this mixture is added to the oil and salt, making sure that no lumps are formed.
After this, the mixture is stirred well using a whisk or blender to ensure that it becomes homogenous. Afterward, a small amount of lemon juice is added at this stage to prevent it from going bad quickly.
Finally, mustard seeds, pepper and some other spices are added at this point depending on how you want your mayonnaise to taste like. If you want it spicy then you might add some paprika powder but if you want it mild then only salt will be required for seasoning purposes.
